In the midst of gluing, cutting, pinning and laughing at our last costume as college students, we got the urge—for some midnight pancakes. Now these are not just any pancakes, they are like pumpkin pie on a skillet, and 1000 times better for you. Parents could make this a fun pre-trick or treating dinner, as it’s fun, and secretly packed with fiber and protein.
From Men’s Health magazine, here is the recipe:
2 cups of your favorite dry pancake mix
3 Tbsp dark-brown sugar
2 ½ tsp pumpkin-pie spice
1 ½ cups milk
1 cup canned pure pumpkin puree (not pie filling)
1 egg, beaten
1 tsp. pure vanilla extract
1 Tbsp vegetable oil, plus more for the griddle
Pure Maple syrup
In bowl 1: combine pancake mix, brown sugar and pumpkin pie spice. In bowl 2: combine milk, pumpkin, egg, vanilla extract and oil. Add bowl 2 to bowl 1. Cook like normal pancakes! So even though the real pumpkins remained uncarved this year (anyone else just too busy?), we got a taste of the real thing anyway.
